Flaxseed Crackers, Cinnamon Bananas & Chick Pea Patties


There is always food in our dehydrators here at the Excalibur premises…lots of healthy snacks and meals prepared in advance so we can munch on them while we’re at work, or take them home for dinner.

Today we decided to share with you some of our homemade recipes, some which were inspired by recipes within the Dehydrator Bible and Preserve it Naturally Book but with a touch of our own ingredients. These have been prepared in the Excalibur 4500 5 Tray – because we find it easier to use the no timer model when dehydrating for more than 26 hours.

On the top row in the photo above, we have created our own version of flax seed crackers. These crackers are so easy to make, and are the perfect snack food or great to take on the trail. Our ingredients are always organic as we do not want to compromise on flavour or nutritional value.

Soak the seeds (pepita aka pumpkin, sesame, flax and chia seeds) for 1-3 hours then mix together with a few tablespoons of tamari, a pinch of salt and a good portion of raw red onion chopped finely. Spread the mixture across the Paraflexx Premium Sheets or Paraflexx Ultra Silicone Sheets and place in the dehydrator for approximately 24 hours. Check to see whether the base has dried sufficiently enough to place another tray on top, then flip it over and peel the sheet away. Place back inside the dehydrator for a further 24 hours or until you’re happy with the consistency.

The tasty little morsels showing on the second row above are simply whole organic bananas sprinkled quite heavily with cinnamon powder. The perfect snack to satisfy those sweet cravings. These can take between 48-72 hours or even longer if you like to have them completely dry. Cut them in half if you want to speed up the process.

The third tray on our dehydrator is the same seed mix as above but we’ve added macadamia nuts to the mix which have been soaked overnight. The nuts seem to convert the crackers into such a wholesome meal, there’s no need to spread anything on top, they are completely satisfying simply eaten as they are.

Last but not least, we have left the best for last. Check out the beautiful chick pea patties we’ve created on the bottom tray. Soak the chick peas overnight, then strain the water and continue rinsing them every few hours until the little tails grow. Once you see the tails they’re ready to use!

Add fresh lemon juice, salt, cumin, fresh garlic and cold pressed olive oil and blend until reasonably smooth. Place them on the Paraflexx Premium sheets or Paraflexx Ultra Silicone sheets in patty size pieces and dehydrate overnight. Then flip, remove the sheets and leave for a further 24 hours or until you’re happy with the result. We find the no timer models best when dehydrating for longer times so you don’t have to keep going back to check whether the timer has switched the unit off.

Everyone has their own preference with regard to the texture or consistency of the end product so there’s no rules about exactly how long you leave the food in for.
