Raw chocolate is honest to goodness yummy. It is easy to make and you know exactly what goes in it.
Melody from Zesty 4 Life introduced me to raw chocolate a couple of years ago and now that I have become confident with a base mix, adding flavours is really simple. After I made my first batch of raw chocolate I was ready to play with adding all sorts of ingredients and knew I’d never buy chocolate from the store again. The taste and texture is so similar to store bought chocolate that it never crosses my mind to buy it when I can make it myself and know it’s actually good for me.
So, what is raw chocolate? It simply means that the ingredients are all raw, unlike conventional store bought chocolate where the ingredients are mostly heated to a high temperature, hence the nutrients are often depleted. It makes simple sense to eat raw ingredients as they come to us in their natural state, and this is the state which provides the most nutrients to our body. With conventional store bought chocolate the ingredients are also usually undesirable.
Here’s an example of the ingredients listed on the back of a store bought chocolate bar in Australia:
Sugar, wheat flour, cocoa butter, nonfat milk, chocolate, refined palm kernel oil, lactose (milk), milk fat, contains 2% or less of: soy lecithin, PGPR (emulsifier), yeast, artificial flavor, salt, and sodium bicarbonate.

Organic coconut oil, coconut milk, coconut sugar and raw cacao.
You choose from the above to make your own informed decision on which chocolate you prefer your family to eat.
Why is raw chocolate good for you? The main ingredient is coconut oil and it is so incredibly good for you that I have replaced all things oil in my house with coconut oil. It has a long list of health benefits but the fact behind it all is that it is mostly made up of medium-chain fatty acids which can actually do amazing things to the human body. Medium-chain fatty acids increase the rate of metabolism in your body which can aid in weight loss, they are an awesome source of energy and they are easily digested. Medium-chain fatty acids include a lauric acid which protects your heart by increasing the level of good cholesterol and lowering the level of bad cholesterol and it is also a nutrient that supports the body’s immune system.
How does coconut oil aid in weight loss? The medium-chain fatty acids get immediately converted into energy rather than being stored as fat which help to stimulate the body’s metabolism burning off fats in the body, resulting in weight loss. It can also significantly reduce your appetite, which also promotes weight loss. It’s already sounding like the much better option to store bought chocolate! Not only is it good for you but it can aid in weight loss!
There are just so many things that coconut oil is good for that it extends beyond just eating it… It’s also fantastic for keeping hair and skin healthy which can also be used to improve the health and appearance of skin and hair. Another incredible application is in a process known as oil pulling, like using it as a mouthwash but it actually kills some of the harmful bacteria in your mouth which improves dental health and reduces bad breath. How it works is that the bacteria gets caught and dissolves in the coconut oil. Every time you do it, it’s removing a large amount of bad bacteria and plaque in your mouth
What else does our raw chocolate have in it that’s good for you? Coconut milk; it’s used to create that general milk chocolate flavour that everyone loves. Coconut milk has much the same health benefits as coconut oil that is highly nutritious and rich in fibre, vitamins, minerals and unlike cow’s milk, coconut milk is lactose free so it can be used as a milk substitute for those that are lactose intolerant.
What makes raw chocolate sweet? Coconut sugar; it is a sugar produced from the sap of cut flower buds of the coconut palm and the liquid sap is basically dehydrated to produce a sugar like product. The manufacturing process is a much more natural process to regular table sugar. Alternatively, you may choose to use another sweetener such as clear agave or maple syrup, and if you’re a diabetic then stevia or xylitol works also.
Where’s the chocolate? Instead of using cocoa it is important to use raw cacao. Raw cacao is made by cold pressing unroasted cocoa beans. The process keeps the living enzymes in the cocoa and removes the fat which is the purest form of chocolate that you can consume. Cocoa looks the same but it’s not as the cocoa powder is raw cacao that’s been roasted at high temperatures. Cacao also has a number of health benefits such as the protection of your nervous system, a number of essential minerals, various vitamins, protein and fibre.
So, there you have it – Melody’s divine 4 minute/4 ingredient raw chocolate recipe is simply organic coconut oil, coconut milk, coconut sugar and raw cacao.
